Parmesan Crusted Talipia

Welcome all! Thanks for stopping by. I am doing something quite shocking today. A recipe post! WOW, hunh? I feel ashamed really. I have fallen into that old "mechanic doesn't want to work on his own car after work scenario". But no more I say. I have a bunch of great things to share with you so by golly I'm going to suck it up!

This is such a easy recipe. Very yummy and budget minded too! My youngest daughter requests this for her birthday dinner. You may notice in the picture a lei around the plate. That was from her luau dinner last year.



Parmesan Crusted Talipia

1 package of frozen talipia fillets( I get mine at Aldi)
2 eggs
1/4 cup of milk or buttermilk
2 cups Italian bread crumbs
1/4 cup all purpose flour
1/4 cup parm cheese
2T lemon pepper seasoning
2 teaspoons garlic powder
Olive oil for frying

Mix all dry ingredients in a shallow dish and set aside. Mix egg and milk in a dish big enough to hold talapia. The Aldi package usually yields 7-8 fillets. Rinse the fillets and place in egg mixture, coat them well and let set for a few minutes. In the mean time add a few TBS oil to pan on medium heat. Roll your fillets in bread crumb mixture and let rest while pan is heating. Just about 3 minutes on each side and they are perfect. Drain on paper towels and serve with lemon wedges! Easy peasy! They are very delicious to boot!!!!

This is a very forgiving recipe you can change it up anyway you want, use corn meal, panko or any fish friendly spices or herbs.

Creamy Garlic Chicken Penne



Happy Monday all! So glad you could drop by. I thought I would share one of my favorite Italian recipes, actually it's one of my favorite chicken recipes too. It is a dish this entire family loves. Not easy to do in this house!


Creamy Garlic Chicken Penne

4 split Chicken breasts
4 cups heavy cream
1/2 cup Parmesan
1 Tablespoon minced garlic
1/4 cup chopped onion
1 stick or 1/2 cup butter
1 pound Penne pasta
1 can fire roasted or Italian diced tomatoes
salt and pepper to taste


Preheat oven to 350 degrees and place chicken breasts on a foil lined baking dish, and bake for 40 minutes or till juices run clear. Cool and remove skin. Chop chicken and sit aside.

Cook Penne according to directions. Drain and rinse pasta. Toss in chicken and tomatoes. In a large skillet or saute pan melt butter and stir in onions and garlic on medium heat till translucent. Add heavy cream in gradually. Once cream is warmed through stir in Parmesan, lower heat and simmer till thickened. Sauce can then be poured over chicken and pasta. Toss well and watch it dissappear.

This dish is great with a salad and crusty Italian bread. A crowd pleaser for sure. My husband loves it in his lunch the next day too.

Chocolate Chip Buttermilk Muffins



Welcome, thanks for dropping by! I am in a bit of a muffin mood today.I thought these easy and yummy little guys would fit the bill. There is something about the tang of buttermilk and the sweetness of chocolate, a match made in baking heaven. Warm up the oven and treat the family to a batch of these today.



Buttermilk Chocolate Chip Muffins
yields 18


1/2 cup or one stick of butter softened
1 cup sugar
2 eggs room temp
1 cup buttermilk
1 3/4 cup flour
1/2 cup cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips

Preheat oven to 350 degrees. cream together butter and sugar till fluffy. Beat in eggs one at a time. Stir in buttermilk and mix well. Sift together dry ingredients and incorporate into wet ingredients a little at a time. Stir in chocolate chips. Pour into prepared muffin tins or liners and bake for approx 18 mins.


I sprinkled them with a bit of powdered sugar but you can skip it if you want. Try one warm. The chocolate chips are so gooey, the best way to eat them if you ask me!


See the cute tiered tray? I scored this at Homegoods on my last trip to Kansas City. I had to go to four different stores to round up 6 dinner plates, 6 salad plates and this server. Can you ladies relate? I bet we all have a Homegoods, Marshall's and TJ Maxx story to tell. The poor hubby and kids had to suffer this trip! I was a woman on a mission.

Does anyone know what kind of bird he is? If it's not a cardinal, blue jay or hummingbird, I'm lost! The salad plates have a blue bird with a red breast on them. I'm guessing bluebird? Stay tuned, a tablescape will be coming with these treasures!
