Overnight Coffee Cake


I love it when a recipe comes along and it is so easy and tasty. You know the kind, you get kinda embarrassed with all the complements? Nah, just kidding, I just suck up those compliments and smile!


This coffee cake is super easy and most of the ingredients are probably already hanging around your kitchen. Just a little prep the night before and you will have the makings for a truly yummy treat to go with your morning coffee and newspaper. I love whipping this up for the hubs and I on Saturday night and just popping in the oven when I get up.


I can't remember where I got this recipe, it was a few months ago on a recipe meme. I will keep looking for its origin. I have tweaked it some. I can never leave a recipe alone. Not even a great one.


Overnight Coffee Cake

3/4 cup butter softened
1 cup sugar
2 eggs
2 cups flour
1 teaspoon baking soda
1 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup sour cream

Topping
3/4 cup brown sugar
1/2 cup nuts
1 teaspoon cinnamon

Drizzle
1 1/2 cups powdered sugar
3 Tablespoons milk
Just whip these two together after the cake has cooled. Just a nice runny consistancy to drizzle over.

In a large bowl cream butter and sugar. Add eggs. Combine in rest of dry ingredients. Fold in sour cream last. Grease a 9x13 baking dish or 2 7x3 loaf pans(my personal choice).Pour in batter. Sprinkle with the topping mixture and cover with wrap and refrigerate over night.

The next morning, remove wrap and let sit on the counter for 30 minutes. Preheat oven to 350. Bake for 35 minutes. Cool and top with drizzle mix.
